The Deli counter at Zingerman’s offers a wide variety of sliced meat, including sandwich cuts as well as cured meats. Curing is the age-old, traditional process of preserving and flavoring meats for longer storage. Join Deli Meat Monger and dry-curing enthusiast Chad Hogan to discuss different styles of curing – whole muscle, salumi, and even pates in this intro level class that will help you better understand the selections at our meat counter, what to look for in a great cured meat, and even some tricks and tips for starting your at-home curing journey. You will learn and also TASTE! Please note: this is (obviously) not a class for vegetarians. We will be tasting pork, beef and chicken products.
