Victoria's S'more Blondies

This recipe comes from Victoria–one of our staff who is well known for feeding her co-workers delicious treats from her kitchen.  This s'mores treat makes use of the delicious, handmade marshmallows made by our friends at the Zingerman's Candy Manufactory. Any chocolate chips will work, but we're especially fond of these bittersweet chips from Michel Cluizel.

Ingredients
  

  • 3/4 cup packed dark brown sugar
  • 1/2 cup vegetable oil
  • 1 cup flour heaping
  • 1/4 tsp baking soda
  • 1 egg
  • 1/4 cup milk
  • 12 Zingerman's Candy Manufactory vanilla marshmallows
  • 1 cup chocolate chips
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground ginger
  • 1/4 tsp ground clove
  • 1 tsp pumpkin pie spice instead of individual spices

Instructions
 

  • In a large bowl, mix flour, dark brown sugar,baking soda, and spices.
  • In the same bowl, add oil, egg, and milk. Mix until smooth.
  • Add the chocolate chips, mix.
  • Grease a 7 x 11 inch pan with vegetable oil, and pour in the mixture.
  • Cook it in a 325° oven for 18-20 minutes,or until inserted knife comes out clean.
  • Remove blondies from the oven, set aside.
  • Set your oven to low broil, and move a wire rack close to the top of the oven.
  • Take your twelve marshmallows and arrange them uniformly on top of the blondies. They will probably melt a little and slip to the sides of the pan. If you want your blondies to be beautiful, consider sticking the marshmallows in place with toothpicks.
  • Put the blondies with the marshmallows back into the top rack of the broiling oven.
  • Watch carefully! They will be perfectly brown inexactly 4 minutes, but how browned you want ‘em is up to you. If they startsmoking, you’ve gone too far. (Unless you like a charred marshmallow.)
  • Take the s’more blondies out, let them cool on aheat-proof surface for 15 minutes.
  • Put them in the fridge so the marshmallows andchocolate chips completely solidify, about 15 minutes.
  • Cut them up into 12 pieces (each piece gets onemarshmallow) and eat. If you used toothpicks, remember to remove them.
