Join us for a style-specific tasting as we explore the beginnings of one of the oldest recorded styles of cheese in the world, it’s transition from farmhouse kitchens to high-end cheese counters, and its implications for cheese production in the centuries to come. Essex St. Cheese chief educator and trainer Rachel Juhl joins up with our Certified Cheese Professional Tessie Ives-Wilson for this tasting – they’ll discuss cheese technology, texture, and flavor, as we taste our way through some delicious examples of this popular cheese style.
