We're very excited about Californian oils. In the short time since the arrival of the first Spanish ships, these award winning Californian oils have taken the world by storm.


From a family owned ranch in Paso Robles. A blend of Tuscan varietals with a personality all its own — bold, sassy and very peppery.


From the sustainable, organic farm of an old friend in Suisun Valley. Silky, clean and green, with a surprisingly sweet start.


From the Napa estate of a doyen of the California olive oil industry. A unique blend of bold Tuscan and silky Provencal olives. Absolutely lovely.


From third generation salami makers in San Francisco, CA, that are doing all the right things.

They say Irish milk is the best milk in the world. And it shows in this rich, creamy butter. If you're not a butter lover, this butter will convert you.


A cheese with a history as old as the mountains. Made in majestic 75 pound wheels, ours are aged by Marcel Petit in an imposing old fort. The wheels on our counter are specially selected for us amongst thousands for their big, nutty lasting flavor.


Well on its way to becoming a legend, this Alpine-style cheese is made by Mike Gingrich with dedication and fastidious attention to detail. Mike visits us once a year with their best cheese so that we can pick our favorite!


Another Wisconsin classic made in the style of a Gruyére, from the Roth and Jaeckle families. Even without any mountains, this cheese brings home the big, intense, nutty flavors you expect in a good mountain cheese!

9. Make this vinaigrette!

Fleur de France Vinaigrette from Zingerman's Guide to Good Eating, p.26

Ingredients:
1 generous tablespoon of Dijon mustard
2 tablespoons of Vinaigre de Banyuls
6 tablespoons of extra virgin olive oil

Procedure:
In a medium bowl, whisk the vinegar into the mustard 'til the two are fully blended. Slowly add the oil, whisking constantly until you have a velvety-smooth sauce. Pour over a fresh green salad or just-cooked potatoes.

10. Make our classic reuben at home.

Ingredients for 4:
1 pound corned beef
1/2 pound sliced swiss cheese
1/2 pint sauerkraut
1/2 pint russian dressing
loaf of jewish rye
