Fantastic American Cheddar matured in cloth, in the traditional English farmhouse style. Aged 12 months in the Cellars at Jasper Hill in Greensboro, VT. Sweet caramel-y flavors, and some nice crystallization, might give the English a run for their money!

We’ve sourced some fantastic gruyere from a single producer at very high altitude in the Swiss Alps. Made in August 2008. An incredibly deep and full flavored cheese makes an incredible fondue!

Rogue River Blue Rogue River Blue cheese

We’re into the 2008 ‘Vintage’ of our favorite American blue cheese. Made with raw cow’s milk from a single herd in Central Point, Oregon, aged at least 12 months in brandy-macerated grape leaves. Amazing full flavor!

One of our favorite holiday treats from Columbus, San Francisco’s premier salame producers. This is their classic, small format dry-cured pork hunters-style sausage liberally spiked with black truffles. Very limited supplies!

Situated in Northern Italy, Franco & Rosella are among only a few producers left that still use a traditional stone mill to crush their olives, capturing the “the tears of the olive”. After crushing, the olive paste is left to gently weep, not mechanically pressed, producing this exceptionally flavorful oil.
