Wild Chicory Bruschetta

Ingredients:

  • 280 g jar Pomodoro Sauce
  • 3/4 jar Wild Chicory, chopped
  • 1 Tomato, chopped
  • 3/4 cup Pecorino Romano, grated
  • 1 tsp Marash Pepper
  • salt & pepper to taste

Directions:

  • Combine all ingredients.
  • Let it marinate for at least 30 minutes.
  • Spoon on toasted bread or toss with pasta.
  • Makes about 32oz. (1 quart)

Duck Armagnac Paté, Cornichons & French Mustard

Moustarde-aux-noixOne of my favorite things to do when I’m going on a roadtrip is to pack some duck & armagnac paté, cornichons, and walnut mustard from France. It’s heavenly—the meatiness of the paté and the vinegary crunch of the cornichons are tied together swimmingly with the rich walnut-y mustard. Add some crisp olive oil and grey salt crackers from Rustic Bakery and a little while Burgundy or my personal favorite, Sauternes, and let me know what time we’ll be leaving…
